Gourmet chef? Just might be, friends, just might be.

Monday night, Lindsay and I made the Best. Meal. Ever. Grilled Sesame Seed crusted Wasabi Honey Tuna. I know! It sounds gourmet as hell! I got the recipe from Good Eats, which is the kick assiest show on Food Network. For more good stuff, be sure to check out the host's site: AltonBrown.com.

The marinade alone is to die for, friends: 2 parts Soy Sauce, 2 parts Honey and 1 part Wasabi powder. Yum.

Basically, you marinate the tuna (our local market had sashimi grade -- yum) in the marinade for 30 minutes to 3 hours, basically, however long you have. You should let the marinade work its magic. Tell the tuna It's magic time, cause it's gonna be some tasty shit. I've found that talking to your food usually makes it taste better. Then roll the magically marinated tuna in raw sesame seeds to liberally coat. For the grilling aspect of the whole thing, Alton suggested using a chimney starter as the main source of cooking. Don't dump the coals out onto the grill, just put a grilling grate on top of the chimney starter. Genius! Pure! Genius!

Sear the tuna on top of the chimney starter for about 30 seconds to a minute per side. Do as many sides as you can. Alton used a block of tuna and did 4 sides. I used tuna steaks and just did top and bottom. It all works. Then take the tuna off the grill and wrap it in plastic wrap for 3 minutes so it can continue to cook, then thinly slice and viola! You have just made a fabulous assed main course for a dinner. Wonderfully seared on the outside, yummy tender sushi tuna on the inside. And the sesame seeds taste terrific. The marinade works most excellently as a dipping sauce, too.

To accompany the tuna, Lindsay made Skin-on Wasabi Garlic Mashed potatoes. Yum.
